HIYAKU offers an intimate Omakase experience, highlighting the decadent flavors, textures, and elegant presentation of high-quality sushi. At every Hiyaku seating, one will find local Pacific Northwest produce and the most coveted fish and seafood on the market. 


Chef Sam Saltos uses his 15 years of culinary practice and international training, with a special focus on sushi, to offer a unique culinary experience. He draws upon his life in Oregon and abroad to present refined local fare with the exacting sensibility of Japanese tradition. 

 

Beyond our ticketed seatings each month, this unique Omakase is also available for private parties, pop-ups, and special event catering.

I'm taking you to Japan


This September, I'm partnering with Lizzy Atwood Wills of Meridian Boutique Travel for a 10-day food-focused journey through Tokyo, Kanazawa, and Kyoto. We designed this trip the way I build a menu — around the best possible ingredients, the right people, and moments you won't find anywhere else.

We'll be at Toyosu before the city wakes up — with a small-group exclusive tour available to select guests. We'll learn from knife makers, rice farmers, and a Geiko who will sit down with us for dinner. And we'll eat — really eat — through three of Japan's most extraordinary food cities. Spots are extremely limited.
